Wine Storage and Wine Cellars

Any wine connoisseur will tell you, if you are going to keep large amounts of wine in your home or even collect it, you will need a proper way to store that wine. Storing wine can be done on a small scale, such as with a wine storage unit or a full-scale wine cellar.

Storing and collecting wine is a practice that is centuries old. Wine, stored properly, will not only maintain its quality but can improve with age in aroma, flavor and complexity. To preserve wine properly, it cannot be exposed to light and must be kept at the proper temperature and within the right humidity. Ideal temperatures for short and long term storage is between 10-14 C° (50-57 F°) with regular humidity to keep the corks from drying out.

A wine storage unit is a small self-contained unit that is plugged in, can be placed right in the kitchen and comes in various sizes from 24" in height to 84". These units moderate humidity and temperature electronically, have UV glass protection and low voltage lighting.

A wine cellar can be integrated into one's home which is already established or is being built. Having your wine cellar built properly is important as you don't want your valuable collection of wine to go to ruin because somebody took shortcuts. When building your wine cellar you will have to determine how much space you want to allocate to it and whether it will be climate controlled or a passive space. If you are storing wine for only short periods of time, you can get away with just installing a passive cellar. If keeping wine for long periods of time then you will want to invest in a climate controlled center.

The room your cellar is installed in will have to have proper insulation, vapor barriers and drywall materials. An insulated door is also required. As for the floor, concrete floors will need a vapor barrier only, sealed with a concrete sealant. Above ground floors need to be insulated with at least an R-19 vapor barrier. Do not use cedar on your walls, ceiling or door as it gives off too strong of an odor and it will taint the wine. Doors should be at least 1 ¾" thick with weather stripping on all four sides. Place a bottom sweep on your door to maintain a constant temperature within the room. You don't want the cool air to escape or warm air to enter and you don't want your climate controlled unit to run all of the time. If you are going to use glass doors, make sure they are double-paned and insulated with tempered glass.

If your floor is concrete, as already stated, you just need to make sure it is vapor sealed. Other flooring materials you can use are slate, tile, marble, or vinyl. You can even use wood, as long as it isn't cedar. But never use carpet. Carpet will collect mold and mildew in the cold.

Next is racking. You will need to ask yourself how many bottles you plan to store and how much space you will need? How much space do you have? What types of materials will you build your racking from. There are different types of woods one can use including redwood and mahogany. Both of these are resistant to rot in the cool and are mildew resistant. Cedar should be avoided due to its odor. You can also choose to use wire latticing.

Now lighting. The most popular type of lighting is called ‘Air Lock' and it is a recessed ceiling light. These lights should be put on dimmer switches to control brightness. Others use track lighting. Also popular are various display lights to accent different areas of the cellar. Display rope lighting is designed and built to fit into the display and be angled toward individual bottle racking. You may want to put your lighting on a timer so that it isn't left on for long periods of time as light produces excess heat and that will cause your cooling unit to overwork itself.

Last is the wine cellar monitoring and security system. Built-in alerts will help notify you if your cellar's temperatures are fluctuating. It also alerts you if the door isn't closed properly. One will want to make sure their cellar door remains closed and locked to maintain room temperature and keep your wine collection safe and secure.

Having a wine cellar at home, whether built-in or using an installed unit is a wonderful way to preserve and collect your favorite wines for all the right occasions.

How do you get black ink pen out of a brown leather couch?

My 2 year old put a black swirly mark on my brown leather couch. I tried leather cleaner, but that did not work. Any suggestions?

If the ink is on a pigmented leather then the first thing you should try is an ink stick (find one that is a professional product used in the industry - LTT do one). The fresher the ink the more chance you have of removing it. Be sure to check the type of leather you have before doing this as if you use this on an aniline style it will not work and may leave a greasy mark which will not go away.

If an ink stick doesn't work a solvent based remover will need to be used and it may also remove finish and pigment so is best left to the experts.

Using hairspray/WD40 and all these other solvent cleaners is very risky as it can make the matter far worse as it can spread the ink over a bigger area and can sometimes then be impossible to fix.
Using alcohol can also be a little risky depending on how stable the finish is. If the finish is unstable this would remove pigment form the leather.
Nail varnish remover or any other solvents will also remove the finish and pigment which will need replacing.

DO NOT USE Baby wipes as they are about the worst thing you can use on a leather as they break down the finish and will eventually ruin it.

Please do not try milk or toothpaste these are silly ideas that will leave sticky residues on the surface which will help to break down the finish on your leather.
Magic erasers usually remove finish and pigment along with the ink.

Old ink will be harder to remove than new ink and may mean resorting to solvents which will also remove the finish. This is probably best left to the experts.

Silicones/furniture polish are the worst thing to use on leather as they will form a coating on the surface of the leather which will not allow any moisture to get to the leather and will eventually break all the finish down and make it crack.

Leather does not need conditioning it needs cleaning and protecting on a regular basis with water based products this will keep it rehydrated and supple. Oils will make things much worse.

Leather should be cleaned gently not scrubbed so 'elbow grease' will only do damage to the finish.

Hide food will not remove ink and will leave residues on the leather which will attract dirt and oils.

Using a good quality leather protector (one that works) will help make this problem easier should it happen again, it also does your leather good by protecting it against oils and dirt which ultimately make the pigment crack and the leather deteriorate.

If the ink is on an aniline leather then there is nothing that will work if leather cleaner has not. Basically you have redyed the leather and you would need a specialist to resolve the problem. Using a cleaner and protector on a regular basis will help to dissipate the ink and eventually it will not be so obvious.

Wine Cork won't Unscrew?

I got a bottle of a tasty pinot grigio when I went out to the grocery earlier this week. I'll admit I started attempting to open it before remembering to remove the foil, but I've screwed up and done that before w/ no problematic effects. The cork kinda crumbled w/ where the corkscrew went b/c it's all soft and I can't get the corkscrew to go in at all, it just crumbles up the cork in that area. I know it's not the wine because it's a respected area winery. It could very well be the grocery store because the lesser Kroger in town. But I really just want to get the darn cork out. I've tried the banging it on something to see if the cork moves tactic, which didn't work. I've read you can just push the cork back in, but mine won't do that. Any help?

Your cork is not crumbling because it's soft, it's crumbling because it's dry.

This is because the shop has stored it upright, instead of on its side.

Best option is to clear off all the crumbs of cork and then push the cork in.

You may need to decant the wine into another container to remove all the bits of cork but the wine will still taste fine.

PS: Despite what Luke says a dry cork does NOT mean wine is spoiled ... Corked wine has nothing to do with having cork in it, it means that the cork had a fungal infection when the bottle was sealed, and that this has tainted the wine .... This can happen with a damp cork as well as a dry one

Storing wine in the refrigerator?

I have no cap bottle my wine, usually with aluminum foil on top of it. ¿I can stay in my fridge or should I leave on my desk?

What type of wine? Red should be left at room temperature, but white and pink are well be refrigerated. Open wine should be drunk within a few days - hence remain in the refrigerator or just put it there to cool before you want to take it. Anyway okay - just make sure no air into the bottle. Why not keep the cork from the bottle of wine, the best thing is that instead of using aluminum foil?
